The restaurant industry in Latin America is very competitive. We all know some restaurant, even one with very good food, that closed a few months after opening its doors. It is not only a business with a highly complex operation and administration, but launching the right food brand in the right place and at the right moment is very difficult, and it has more art than science to it. Without a doubt, it is one of the hardest challenges in the business world, and a challenge that today’s guest, Daniela Izquierdo, dared to take on when she founded Foodology.

Foodology is a startup that creates and operates virtual restaurant brands focused on delivery, using technology and data to make a highly scalable and less risky business. To date, it has opened more than 30 hidden kitchens, in 8 cities across Latin America, and has raised more than 20 million dollars from investors such as Base 10 Partners, Jaguar Ventures, Kayyak Ventures, and Andreeseen Horowitz, one of the most important venture capital funds in the world.

Daniela told us about her creative and research process for creating a restaurant brand, and how they are using technology to create kitchens that produce up to 8 times more than a traditional restaurant. This episode is a perfect example of how an entrepreneur can create disruptive proposals with technology and a deep knowledge of the structure and competitive dynamics of her industry.
